Global Settings
All archive pages are controlled by the WP Dashboard > Appearance > Customize > Posts > Archive settings.
The settings are divided into sections:

Individual Settings
For a category/tag archive page, you can override the global setup via
WP Dashboard > Posts > Categories > A category > Edit page for categories and
WP Dashboard > Posts > Categories > A tag > Edit page for tags.
